On Tuesday 29 October, Chef and owner of iCookIndian, Amarpal Harrar visited Stafford College to host an evening of Indian culinary delights at The Riverbank Restaurant.

As part of the evening, students studying the Level 2 and Level 3 Diploma in Professional Cookery course got the chance to learn about the origins of a number of authentic Indian dishes as well as prepare a menu comprising of the following:

  • Poppadoms and Dips - at the table
  • Kale Pakora - delicious crispy fritters
  • Chloe Kachori - chickpea and fresh corriander bites
  • Channa Chaat - fresh palate cleansing salad
  • Aloo Gobhi - potato and cauliflower sabjee
  • Bengan - fresh aubergine side
  • Punjabi Style Chicken Curry - classic regional chicken curry with a light fragrant sauce
  • Pork Vindaloo - authentic and fragrant, not to be confused with the hot stuff!
  • Carrot Halwala - warm and moorish, with a hint of ghee.

Taking inspiration from his mum’s home cooking, Amarpal created the hugely successful, Staffordshire based iCookIndian back in 2013, with a desire to share authentic home-style cooking and provide truly memorable experiences for its customers. The family run business offers an authentic Indian cookery school providing at home tutorials, experience days and culinary tours.

Commenting on the event, Amarpal said: ā€œThe students have worked really hard to create a full banquet that any Maharaja would be proud of.ā€
